This is a very delicious soup, if you are allergy to gluten, you can use rice
noodles, spaghetti squash noodles or no noodles.


2 lb beef, 1 onion, 2 green onions, 1/2 lb of noodles (optional), 1/2lb carrots (optional),
or 1 potatoes (optional), 1 teaspoon of salt, 4 tablespoons soy sauce, 1/4 teaspoon
canyon pepper, a little cilantro.


1. cut the beef into about 2 inch pieces. Punch 4-5 holes on each piece with knife, chop
the onion. Marinate the beef with the onion, salt, soy sauce, and canyon pepper for 2
hours. Cook the beef with 10 cups of water for 2 hours on stove.  Take the beef out of
the broth.  Keep only the clear broth without the residuals on the bottom, and without the
fat on the top.

2. dice the carrots or potatoes into 1 inch pieces, boil them until cooked, boil noodles
until cooked, take them out of the water.

3. chop the green onion and cilantro.

4. when ready to eat, reheat the beef broth until boiling, put the noodles, carrots or
potatoes and the beef in a big bowl, and put the green onion and cilantro on the top,
pour the boiling broth  onto the bowl. Done. Enjoy!
